Salsa Verde Cruda

Tacos de Canasta: Mexico City’s Sweaty Basket Tacos

If you have spent a morning in Mexico City, you have probably seen a bicycle with a big wicker basket strapped to the back, wrapped in blue plastic and cloth, and a vendor calling out tacos de canasta. Inside are dozens of small, soft tacos, stacked and steaming. Their nickname, tacos sudados (“sweaty tacos”), explains the texture perfectly.

How Lebanese Immigrants Gave Mexico Al Pastor

Walk into any taquería in Mexico City after dark and you will see it: a glowing, rust-red cone of pork turning slowly next to a vertical flame, a pineapple perched on top. Al pastor feels like the most Mexican food imaginable. But its roots are in the eastern Mediterranean.

Tacos La Güera

Suadero bubbling in a pan of its own fat since 1987.

A street stand built around a single choricera: a domed steel pan where suadero, longaniza and tripa confit slowly in rendered fat. Tiny tortillas, double-stacked, dipped briefly in the pan juices.

Stand, eat, point at the next thing, repeat. Salsas live in molcajetes on the counter and are refilled constantly.

Guacamole Taquero

The thin, pourable avocado-tomatillo salsa you find at street stands, not the chunky dip. Stretches one avocado across a hundred tacos and stays green longer.
