Birria is a slow-braised stew from Jalisco, traditionally made with goat, seasoned with dried chiles, and often cooked for hours until the meat falls apart. The Tijuana-style taco version, especially the cheese-stuffed quesabirria, took over the internet around 2020, and every city now has at least three places that fry tortillas in the red fat and hand you a cup of consommé for dunking. Birria Boss is one of them.



The good
The tortillas are gorgeous: crackly, red, glossy, with lacy edges of fried cheese. The beef itself is tender and well-seasoned, and the diced onion and cilantro are fresh.
The not-so-good
The consommé is the soul of birria, and here it tastes more like salted beef broth than a chile-rich stew. There is little guajillo depth, almost no clove or cumin warmth, and the cup is lukewarm by the time it hits the table. The tacos also arrive a bit soggy if you order more than four at once.
A birria taco is only as good as the consommé you dunk it in. Here, the dip is the weak link.
